Steak fajitas are a mouthwatering Tex-Mex dish featuring tender veal strips sautéed with vibrant bell peppers and onions, seasoned with a medley of spices like cumin, paprika, and ginger. Wrapped in warm flour tortillas, these fajitas are a quick and flavorful meal perfect for any occasion.

Ingredients

  • 8 wheat flour tortillas
  • ½ kg thin and tender veal steaks
  • 3 bell peppers (green, red, and yellow)
  • 1 onion
  • 2 cloves garlic
  • 1 tsp ground pepper
  • 1 tsp cumin
  • 1 tsp sweet paprika
  • 1½ tsp ginger powder
  • 1½ tsp salt
  • Hot paprika (adjust to taste)
  • 3 tbsp olive oil

Instructions

  • Prepare the Vegetables:
    • Wash bell peppers, dry them, and slice into strips.
    • Peel and slice the onion into julienne strips.
    • Peel and thinly slice garlic cloves.
  • Sauté the Vegetables:
    • Heat 3 tablespoons of olive oil in a frying pan or wok.
    • Add the sliced vegetables and sauté for 6–8 minutes, stirring occasionally.
  • Prepare the Meat and Spice Mix:
    • Cut veal steaks into thin strips.
    • In a bowl, combine ground pepper, cumin, sweet paprika, ginger powder, and salt. Adjust hot paprika to taste.
  • Cook the Meat:
    • Add the veal and spice mixture to the pan with the vegetables.
    • Stir well to combine, cooking for 6–8 minutes until the meat is tender.
  • Serve:
    • Remove from heat. Serve alongside warm tortillas for assembling fajitas as desired.

Notes

  • For additional flavor, marinate the meat in lime juice, garlic, and cilantro before cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
