Instructions

Prepare the Sauce:

  • In a mixing bowl, whisk together pineapple juice, brown sugar, and soy sauce until fully combined.

2. Assemble in the Crockpot:

  • Place the chicken tenderloins in the crockpot.
  • Pour the pineapple-soy sauce mixture over the chicken, ensuring even coverage.

3. Cook:

  • Cover and cook on LOW for 6–8 hours (or on HIGH for 3–4 hours).
  • The chicken should be tender and easy to shred with a fork.

4. Serve and Enjoy:

  • Serve warm over rice, noodles, or in lettuce wraps.
  • Garnish with sesame seeds, chopped green onions, or extra pineapple chunks.

Notes

  • Make It Spicy: Add 1–2 tbsp Sriracha or red pepper flakes to the sauce.
  • Thicker Sauce: Mix 1 tbsp cornstarch + 2 tbsp water and stir in during the last 30 minutes of cooking.
  • Extra Tropical Flavor: Replace half of the pineapple juice with coconut milk for a creamy twist.
