Ingredients

  • ⅔ cup mashed sweet potato puree
  • 1 cup quick oats
  • 2 tablespoons maple syrup (or any liquid sweetener)

Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Mash the Sweet Potato:

    • Mash the cooked sweet potato into a smooth puree.
  • Make the Dough:

    • In a bowl, mix the sweet potato puree, oats, and maple syrup until a thick batter forms.
  • Form the Cookies:

    • Scoop tablespoon-sized portions of the dough, roll into balls, and place them on the baking sheet. Slightly flatten each ball.
  • Bake the Cookies:

    • Bake for 18-20 minutes, or until the top is dry but the inside is still moist.
  • Cool and Serve:

    • Cool the cookies on a wire rack before serving.

Notes

  • Add-ins: Enhance the flavor with vanilla extract, cinnamon, chocolate chips, nuts, or raisins.
  • Texture: For a crunchier texture, use old-fashioned oats instead of quick oats.
