Taco Soup is a hearty, flavorful dish made with seasoned beef, beans, corn, and tomatoes. It’s easy to make, customizable, and perfect for any occasion, whether it’s a busy weeknight or a cozy meal on a chilly day.

Ingredients

For the Soup:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 can tomato sauce
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 2 cups water or beef broth
  • Salt and pepper to taste

Instructions

  • Cook the Beef:
    • Brown the ground beef in a large pot over medium heat. Drain any excess fat.
  • Sauté Onion:
    • Add chopped onion to the pot and sauté until soft, about 5 minutes.
  • Season the Soup:
    • Stir in taco seasoning and ranch mix, and cook for 1-2 minutes until fragrant.
  • Add Ingredients:
    • Pour in kidney beans, black beans, corn, diced tomatoes, tomato sauce, and water or broth. Stir to combine.
  • Simmer:
    • Bring the soup to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  • Season & Serve:
    • Taste and adjust with salt and pepper. Serve with your favorite toppings like sour cream, cheese, or tortilla chips.

Notes

  • Chicken Taco Soup: Swap ground beef for shredded chicken for a lighter version.
  • Vegetarian Taco Soup: Omit meat and add extra beans and vegetables like zucchini or bell peppers.
