Ingredients

  • 4 medium zucchinis

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup cream cheese, softened

  • 1 teaspoon garlic powder

  • 1 teaspoon dried Italian seasoning (or oregano)

  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

  • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  • Preheat the oven: Preheat to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

  • Prepare the zucchini: Cut each zucchini in half lengthwise, then slice each half into 1-inch thick “steaks.” Use a spoon to scoop out the seeds to create a small well for the cheese mixture.

  • Season the zucchini: Arrange the zucchini steaks on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Brush or spoon the oil evenly.

  • Roast the zucchini: Roast in the preheated oven for 15-20 minutes, or until tender and lightly browned around the edges.

  • Prepare the cheesy topping: In a small bowl, combine mozzarella, Parmesan, cream cheese, garlic powder, Italian seasoning, and red pepper flakes (if using). Mix well until evenly combined.

  • Top with cheese: Once the zucchini is tender, remove from the oven. Spoon the cheese mixture onto each zucchini steak, spreading it evenly.

  • Broil for a cheesy finish: Set the oven to broil and cook for an additional 3-5 minutes, or until the cheese is melted and golden brown. Watch closely to avoid burning.

  • Serve: Garnish with fresh parsley and serve immediately.

Notes

  • Fresh veggies: Add finely chopped spinach or sun-dried tomatoes to the cheese mixture for added flavor.
  • Vegan option: Use dairy-free cheese and vegan cream cheese to make this dish plant-based.

  • Spicy twist: For some heat, add diced jalapeños or chili powder to the cheese mixture.

  • Different cheese: Try goat cheese, feta, or Gruyère for unique flavor combinations.
