Tex-Mex Frito Fiesta Bake is a bold, cheesy, and crave-worthy casserole layered with seasoned ground beef, beans, sour cream, and melty cheese, all topped with crispy Fritos® for the ultimate Tex-Mex comfort food experience. This easy-to-make bake is perfect for family dinners, potlucks, or game day gatherings, and it’s endlessly customizable to suit your spice level or dietary needs.

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 3 cups Frito corn chips (about half a bag)
  • 1/2 cup sliced green onions (optional, for garnish)
  • 1/2 cup chopped cilantro (optional, for garnish)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook Meat: In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Drain any excess fat.
  • Season Mixture: Stir in taco seasoning, diced tomatoes with green chilies, and black beans. Simmer for 5 minutes, then remove from heat.
  • Layer the Casserole: In the baking dish, layer half of the Fritos, then top with half of the beef mixture, followed by a layer of sour cream, and a mix of shredded cheddar and Monterey Jack cheese.
  • Repeat Layers: Add another layer of Fritos, remaining beef mixture, and top with the rest of the cheese.
  • Bake: Bake uncovered for 20–25 minutes, or until cheese is bubbly and melted.
  • Garnish and Serve: Let rest for 5 minutes. Top with green onions and cilantro if desired, and serve warm.
