Ingredients

  • 1 lb fresh or canned salmon, drained and flaked (remove bones if desired)
  • 1/2 cup breadcrumbs (preferably panko for extra crispiness)
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or vegetable oil, for frying

Instructions

  • Prepare the salmon: If using fresh salmon, cook it by baking or pan-searing until fully cooked. Flake it with a fork into small pieces. If using canned salmon, drain and flake it, removing any bones if preferred.
  • Make the mixture: In a large bowl, combine the flaked salmon, breadcrumbs, eggs, mayonnaise, Dijon mustard, lemon juice, parsley (if using), garlic powder, onion powder, salt, and pepper. Mix everything together until just combined.
  • Form the cakes: Use your hands to form the mixture into patties, about 1/2-inch thick. This should make around 8-10 cakes, depending on size.
  • Cook the cakes: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the salmon cakes, cooking in batches if necessary. Fry each cake for 3-4 minutes per side until golden brown and crispy.
  • Drain and serve: Remove the salmon cakes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately with lemon wedges or your favorite dipping sauce, such as tartar sauce or creamy dill sauce.
