Ingredients

For the Cupcake Base:

  • All-purpose flour
  • Baking powder
  • Sugar
  • Eggs
  • Milk
  • Butter
  • Espresso powder or coffee
  • Vanilla extract

For the Filling:

  • Mascarpone cheese
  • Heavy cream
  • Powdered sugar
  • Vanilla extract
  • Rum or coffee liqueur (optional)

For the Topping:

  • Cocoa powder
  • Chocolate shavings (optional)

Instructions

  • Prepare the Cupcake Batter: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a bowl, whisk together the flour and baking powder. Beat sugar and eggs until fluffy, then add melted butter, milk, and vanilla extract. Gradually mix in the dry ingredients followed by the espresso powder.
  • Bake the Cupcakes: Spoon the batter into the cupcake liners and bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
  • Prepare the Filling: Whip mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until thick and creamy. If desired, add rum or coffee liqueur for extra flavor.
  • Soak the Cupcakes: Poke holes in each cupcake and brush with a little espresso syrup to infuse the coffee flavor.
  • Fill the Cupcakes: Pipe or spoon the mascarpone filling into the center of each cooled cupcake.
  • Add the Finishing Touch: Dust with cocoa powder and top with optional chocolate shavings.

Notes

  • For a stronger coffee flavor, add more espresso or brewed coffee to the cupcakes.
  • If you want a dairy-free version, substitute with dairy-free mascarpone and whipping cream.
  • To prevent soggy cupcakes, lightly brush the coffee syrup instead of soaking them too much.
