Ingredients

  • 2 pounds potatoes, peeled and halved
  • 1 cup milk
  • 1 bunch green onions, thinly sliced
  • ¼ cup butter, cut into pieces
  • ½ teaspoon salt, or to taste
  • Freshly ground black pepper to taste

Instructions

  • Cook the Potatoes:

    • Place the peeled and halved potatoes in a large pot and cover with salted water.
    • Bring to a boil over medium-high heat, then reduce to medium-low and simmer until the potatoes are tender (about 20 minutes).
  • Prepare the Milk Mixture:

    • While the potatoes are cooking, combine the sliced green onions and milk in a saucepan.
    • Heat over medium-low for 3-4 minutes until warm.
  • Dry the Potatoes:

    • Once the potatoes are tender, drain them well.
    • Return the potatoes to the pot, cover with a clean dish towel, and place over very low heat for 2-3 minutes to dry out the potatoes.
  • Mash the Potatoes:

    • Remove the dish towel, add butter and salt to the potatoes, and mash until smooth.
  • Combine and Serve:

    • Stir in the warm milk and green onion mixture until well combined.
    • Season with freshly ground black pepper.
    • Serve hot, with an extra pat of butter melting on top if desired.

Notes
