Turkish Eggs (Çılbır) is a rich and flavorful Turkish breakfast dish featuring poached eggs over creamy garlic yogurt, topped with spiced butter infused with Aleppo pepper. Ready in just 15 minutes, this authentic recipe is perfect for a quick, satisfying breakfast or brunch!

Ingredients

  • 2 large eggs
  • 1 cup plain Greek yogurt (or Turkish yogurt)
  • 1 garlic clove, minced
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • ½ teaspoon Aleppo pepper (or paprika + pinch of cayenne)
  • 1 teaspoon olive oil (optional)
  • 1 tablespoon white vinegar (for poaching)
  • Fresh dill or parsley (for garnish)
  • Toasted bread, for serving

Instructions

  • Prepare the Yogurt Base:

    • In a bowl, mix Greek yogurt, minced garlic, and salt. Set aside.
  • Poach the Eggs:

    • Bring a saucepan of water to a gentle simmer.
    • Add vinegar and stir to create a whirlpool.
    • Crack each egg into a small bowl and gently slide it into the water.
    • Poach for 3-4 minutes until the whites are set but yolks remain runny.
    • Remove with a slotted spoon and drain on a paper towel.
  • Make the Spiced Butter:

    • Melt butter over low heat in a small pan.
    • Add Aleppo pepper (or paprika + cayenne) and stir for 30 seconds until fragrant.
    • Remove from heat and stir in olive oil if using.
  • Assemble the Dish:

    • Spread the garlic yogurt onto a plate or shallow bowl.
    • Place poached eggs on top.
    • Drizzle with the spiced butter.
    • Garnish with fresh dill or parsley.
