Turkish Red Lentil Soup (Mercimek Çorbası) is a warm, comforting dish made with red lentils, aromatic spices, and fresh mint. This protein-packed soup is naturally vegetarian, budget-friendly, and ready in under an hour. A squeeze of lemon adds the perfect finishing touch, making it a must-try for soup lovers.

Ingredients

  • 1 cup red lentils, rinsed
  • 1 medium onion, chopped
  • 1 medium carrot, chopped
  • 2 tablespoons olive oil or butter
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried mint (or 1 tablespoon fresh mint, chopped)
  • 5 cups vegetable or chicken broth
  • Salt and black pepper, to taste
  • 1 tablespoon tomato paste (optional)
  • Juice of 1 lemon (for serving)

Instructions

  • Sauté the Vegetables: Heat olive oil or butter in a large pot over medium heat. Add onions and carrots, sautéing until softened (about 5 minutes).
  • Add Spices and Lentils: Stir in cumin, paprika, and dried mint. Add red lentils and mix well.
  • Simmer the Soup: Pour in broth, bring to a boil, then reduce heat and let simmer for about 30 minutes, or until lentils are soft.
  • Blend (Optional): Use an immersion blender to puree the soup until smooth, or leave it slightly chunky for texture.
  • Adjust Seasoning: Add salt and black pepper to taste. Stir in tomato paste for extra richness (if using).
  • Serve: Ladle into bowls, squeeze fresh lemon juice on top, and garnish with extra mint if desired.

Notes

  • Spicy Version: Add red pepper flakes or cayenne for extra heat.
  • Creamy Texture: Stir in coconut milk or cream for a richer consistency.
  • Different Herbs: Swap mint for fresh parsley or cilantro for a flavor variation.
