Ingredients

Instructions

  • Prepare the caramel topping: In a small saucepan, combine sugar and water. Heat over medium heat, stirring constantly until sugar dissolves. Let the mixture simmer until it turns golden brown, about 5-7 minutes. Quickly pour about 1 teaspoon of caramel into each muffin cup, coating the bottom. Set aside to cool and harden.
  • Prepare the muffin batter: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners. In a medium bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, whisk milk, eggs, melted butter, and vanilla extract until combined. Stir the wet ingredients into the dry ingredients until just combined; be careful not to overmix.
  • Prepare the flan filling: In a separate bowl, whisk together sweetened condensed milk, evaporated milk, eggs, sugar, and vanilla extract until smooth.
  • Assemble the muffins: Spoon about 1 tablespoon of muffin batter into each muffin cup over the caramel. Then, gently pour the flan filling over the muffin batter, filling each cup nearly to the top. The flan filling will settle at the bottom, creating a creamy, custard-like layer.
