This Zucchini Pizza Crust is a nutrient-rich, low-carb, and gluten-free alternative to traditional pizza dough. Made with grated zucchini, oat flour, eggs, and mozzarella, it’s a healthy, crispy, and delicious base for your favorite pizza toppings. Perfect for those on a low-carb or gluten-free diet!

Ingredients

  • 1 zucchini, grated
  • 4 tbsp oat flour (or almond flour for low-carb option)
  • 3.5 oz (100g) mozzarella cheese, grated
  • 2 eggs
  • Salt & black pepper, to taste

Instructions

1. Prepare the Zucchini:

  1. Wash and grate the zucchini using a coarse grater.
  2. Sprinkle with salt and let it rest for 5 minutes to draw out moisture.
  3. Squeeze out as much excess liquid as possible using a clean towel.

2. Mix the Ingredients:

  1. In a bowl, mix drained zucchini, oat flour, mozzarella, eggs, and black pepper.
  2. Stir until well combined into a dough-like consistency.

3. Shape & Bake the Crust:

  1. Preheat oven to 356°F (180°C).
  2. Line a pizza pan with parchment paper and lightly grease.
  3. Spread the zucchini mixture evenly, shaping it into a round crust.
  4. Bake for 20 minutes, or until golden brown and firm.

4. Add Toppings & Final Bake:

  1. Remove from oven and add your favorite pizza toppings.
  2. Return to the oven and bake for 10-15 more minutes, until cheese melts.
  3. Serve hot and enjoy!

  • or extra flavor: Add dried oregano, basil, or garlic powder to the crust mixture.
